When it comes to burgers, the Nantucket Basket Weave Bacon Burger reigns as one of the best burgers known to man. Preheat grill to high heat and reduce heat to medium when you are ready to grill.
Bake the Apple Smokewood Bacon in the oven according to instructions ahead of time. We like to weave the bacon into a basket weave pattern - Nantucket style! It is essentially a quilted blanket of bacon that can be used to wrap around other foods. A 12-strip weave is just about perfect. By cooking the strips into a six- by six-strip square, you can then cut it up into four quadrants that fit nearly perfectly on top of a burger, with only the edges hanging out.
In a large bowl, mix together the Cheddar cheese, Parmesan cheese, onion, egg, ketchup, Worcestershire sauce. Crumble in the ground beef, and mix together by hand. Add salt and pepper to taste.
Form six-ounce patties with a small dimple in the center so that they cook up flat. Grill burgers over medium-high heat, flipping once until desired doneness is reached, approximately 4 minutes on each side for medium.
Near the end of the burger cooking time - place a slice or two of the Cheddar Cheese on top to melt. Add bacon basket weaves to each burger to warm and lightly toast buns on the grill. The buns cook very quickly so reduce the heat to low and watch them carefully.
Top the bacon burger with ketchup (or condiment of your choice), lettuce, sliced tomato, onion and pickle. Enjoy with homemade French fries and a cool brew!
